Sorting the oysters is an ongoing process whether they are in the upweller stage or in the cages. While in the upweller, the oyster seeds are sorted using a seed sorter. This process ensures that the faster growers are removed from the oysters that grow more slowly.The same process takes place when they are out of the upweller and in the cages. A shaker table is used to sort the oysters into four different trays depending on their size. Keeping them grouped in like sizes while in the bay helps them grow more steadily.
